Jordan LeBel pairs teaching with chocolate for a delicious online learning course - BILL BROWNSTEIN, Montreal Gazette
Jordan LeBel is in his element. Surrounded by an enraptured group of epicures, he offers this counsel: "Observe the colour. Notice the nuances, then the sheen. Smell closely and deeply. Its personality will reveal itself. Identify the aromas. Can you smell the nuttiness, the hint of caramel?" No, LeBel is not rhapsodizing about a rare Bordeaux vintage. Would you believe he's talking chocolate? Okay, not Baby Ruths or Rolos. Rather, Valrhona, considered by some to be the Cheval Blanc of dark chocolate.
